My FAVORITE summertime dessert!


I just have to share this recipe---it's one of my favs EVER! And so easy!
Sugar Cookie Shortcake
Ingredients:
1 pkg refridgerated sugar cookie dough
2 T sugar
1 lb fresh strawberries (it's also delish with blueberries, too!)
1 4-serving box of vanilla instant pudding
1 C cold milk
3/4 whipping cream

Preheat oven to 325. Line 2 8in round pans with foil (spray foil with Pam). Cut cookie dough in half and press into bottom of pans. Bake 15 min or until golden brown. Cool in pan for 10 mins.
Use foil to lift cookies from pans, cool completely on racks for 20 mins. Slice strawberries, spinkle with sugar, set aside. In a separate bowl, mix pudding and milk for 2 min. In another bowl, beat whipping cream until stiff peaks form. Fold into pudding mixture. Remove foil and layer cookie, pudding and strawberries in serving dish. Refridgerate 1 hour serving. YUM!

note--I have substituted the whipping cream with cool whip and it was still just as awesome--and a little easier! I got this recipe from www.pilsbury.com
